This recipe was based on @yogarunlove and @amandamclark’s recipes. But I made some changes.
1.5 Medium-sized Tomatoes
2/3cup pureed pumpkin
1.5 Cloves of garlic (diced and sauteed) – I think I’d use 3 next time!
1/2 cup black beans
1/2 cup kidney beans
1/2 of a large green pepper
1 and 1/2 sliced mushrooms
2t chili powder (I used cayenne, so it was SPICY!)
1 and 1/2t cumin
1 and 1/2t oregano
1 and 1/2cup water
1t baking powder
Salt & pepper, to taste
Bake at 420 degrees for 15 minutes. (Maybe a little shorter than that – watch it! And stir occasionally!)
*Note: The pumpkin is a bit bland. Try adding: nutritional yeast, plain greek yogurt, cheese, anything you’d like! Next time, I’m trying a different recipe. I really like this, though!!
